Ingredients- Pomfret Curry

  1. 1 large pomfret 3 tbsp ghee / oil 3 medium
  2. onions, finely chopped
  3. 6 garlic flakes, finely chopped
  4. 1″ piece of ginger, finely chopped
  5. 5-6 green chillies, finely chopped
  6. 250 ml fish stock 
  7. 100 ml thick coconut milk
  8. 1 tsp salt
  9. 1 tsp black pepper powder
  10. 2 tbsp brown palm vinegar Masala
  11. 1 tsp cumin seeds
  12. ½ tsp turmeric powder
  13. 1 tsp rice grains
  14. 2 green cardamoms
  15. 3″ stick cinnamon
  16. 4 cloves 

How To Prepare Pomfret Curry

  1.  Clean fish, wash and drain.
  2. Cut into ½” thick slices.
  3. Grind masala ingredients to a fine consistency.
  4. In a pan, heat ghee / oil and sauté onions over moderate heat, till golden brown.
  5. Add garlic, ginger and green chillies and fry well, till fragrant.
  6. Add ground masala and stir till the oil separates from it.
  7. Sprinkle in a little water if required, to prevent burning.
  8. Add stock and coconut milk, then fish, salt and pepper.
  9. Bring to a boil, stirring all the while.
  10. Lower heat, add vinegar and simmer for 5 minutes.
